Jaime has dedicated his life to cooking, a passion that began in renowned restaurants in his hometown, including Donostia and Astrid & Gastón. His career later took him to some of the leading kitchens in Medellín and Cartagena, including Carmen and the Sofitel Legend Santa Clara. There, he strengthened his experience and culinary vision, becoming one of Cartagena’s most recognized chefs.
His path has been shaped by discipline, creativity and respect for his ingredients, building a culinary identity grounded in technique and the exploration of new flavors. As chef of Sambal Bistro Caribeño, he draws inspiration from the richness of the Colombian Caribbean, showcasing produce from Montes de María and the work of local farmers through a cuisine that connects origin, tradition and fine dining.
Together with Jaris, he shares a story of resilience, perseverance and love of family, values that reflect his human and professional qualities. His purpose is to create meaningful dining experiences, where every dish tells a story and honors the essence of its land.
Jaris is a mother, a wife and the daughter of a farmer who loves the land as much as his family. She grew up in the heart of Montes de María, surrounded by landscapes, colors, aromas and flavors that awakened in her a deep connection with good food, the countryside and its wonderful produce.
She is the CEO of Jaris Market and heads public relations and events for Sambal Bistró. She is married to chef Jaime Galindo, whom she describes as “an outstanding human being and the best husband and partner.”
Jaris understands that behind every ingredient there is a story of resilience, hard work, perseverance and love; values she now seeks to pass on to her greatest inspirations, Jerónimo and Julieta, whom she considers her main driving force in life.
